DOF is a property of a lens. It is determined by only three factors: focal length, aperture, and subject to camera distance. Once again, the reason why people say that smaller formats "have more DOF" is only because shorter/wider lenses are necessary to match FOV with larger formats, thereby resulting in more DOF for the equivalent FOV. The same lens, at the same aperture, on two different-sized sensors, pointing at the same object, at the same distance will have exactly the same DOF.

Confirmed that APC (APS-C) chip is quite close to 35mm cine. I have been using an APC (APS-C) camera for years on scouts for film shoots (and more recently, full-size sensor HD shoots) and the focal lengths are very similar.
For what it's worth, every AC I know who works with the 5DMKII has had a brutal time maintaining "sharps" with that format. Certainly it is much more delicate than the little viewfinder on the back will confirm. Shallow focus is only worth it if one can actually keep the subject in focus...! The APC(APS-C) sensor delivers a nice compromise, if even that.
But the problem of the 7D is there is not plenty much of fast wide lens, that's the thing you need to consider if you chose to buy 7D
